Amaranthus seed can be sown from from April to August directly into a well prepared seed bed. Sow thinly in rows 12 inches apart. Cover with a 1/4 inch of soil, firm gently and keep moist. When large enough, thin out the seedlings to 3 inches apart for baby leaf or 8 inches for mature plants. The crop can be harvested from June until October. For baby leaves, only pick a few leaves per plant. Harvest leaves and stem from the top of mature plants to encourage further side shoots. Remove any flowers as soon as their buds appear.
